Buffalo Chicken & Broccoli Bowls (with Cauliflower)

Last week we cooked low-carb/high protein buffalo chicken and broccoli bowls. I served the chicken and broccoli over cauliflower rice (super easy to make). You could also substitute the cauliflower with regular white rice. This was my first time making cauliflower rice. I will definitely be making this recipe again!

What you will need:

For the Cauliflower Rice:

  • 1 cauliflower head
  • 1 tbs olive oil
  • salt + pepper

For the Chicken and Broccoli:

  • 1 lb. boneless chicken breast
  • 1 broccoli head
  • 1 tbs olive oil
  • 1/2 cup hot sauce (we used Frank’sRed Hot)
  • 2 tbs butter
  • salt + pepper

Directions:

For the Cauliflower Rice:

  • Cut cauliflower into medium to small sized florets. Make sure to remove the tough part of the stem.
  • Place the cauliflower florets in a food processor and pulse it until it resembles grains of rice. I didn’t blend mine too much, because I didn’t want it to turn into cauliflower mash.
  • Over medium heat, add the olive oil to a medium-sized pan. Then add the cauliflower and salt + pepper (Cook 5-7 minutes)

For the Chicken and Broccoli:

  • Over medium heat, add the olive oil to a medium-sized pan. Cut the raw chicken into bite-size pieces. Add the chicken and cook until browned on both sides (4-5 minutes).
  • Add the broccoli to the pan and cover. Allow to steam until tender (5-10 minutes). Stir occasionally to keep the chicken from browning too much.
  • While the broccoli cooks, prepare the hot sauce. Melt the 2 tablespoons of butter with the hot sauce and whisk to combine.
  • Pour the sauce over the chicken and broccoli and stir.
  • Serve over cauliflower rice or regular rice. Enjoy!
